The American Heart Association recommends we eat fish at least 3 times per week. Salmon is not only a fish but one that is high in omega-3 fatty acids! Studies show eating a diet high in omega-3s lowers the risk of heart disease.

Sweet Potatoes and broccoli are sources of soluble fiber! Soluble fiber acts to lower cholesterol by decreasing its absorption and increasing its secretion.

Olive oil is a plant sterol! Plant sterols reduce cholesterol by competing with it in the digestive system.

Wow three great benefits in one meal!

When I made the recipe I used fresh broccoli. Substitute frozen if you like. Grilling the salmon gives it a nice texture but you can also pan sear.

I have also mixed in red-skinned potatoes for variety. Another option is to replace sweet potatoes with cubed butternut squash. Include onions to enhance the flavor and add another plant sterol!

I’ve made this for my family and they loved it. Even my husband who usually doesn’t care for sweet potatoes, enjoyed them.

Grilled Salmon with Roasted Sweet Potatoes and Broccoli

Ingredients

For the Salmon

  • 1 pound Salmon
  • 2 Tbsp Olive oil
  • 1/2 tsp Salt
  • 1/2 tsp Ground pepper
  • 1 Tbsp Minced garlic
  • 1 Tbsp Red wine vinegar

For the Sweet Potatoes and Broccoli

  • 2 large Sweet Potatoes
  • 2 cups Broccoli florets, cut into bite sized pieces
  • 2 Tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Ground pepper
  • 1 Tbsp Garlic powder

Instructions

For the Salmon

  • In a medium bowl, mix the olive oil, salt, pepper, minced garlic and vinegar. to make a marinade.
  • Place the salmon in a food storage bag and pour in the marinade. Seal the bag and place in the refrigerate for 30 minutes to marinate,
  • While the salmon is marinating, prepare the sweet potatoes and broccoli.

For the Sweet potatoes and Broccoli

  • Pare sweet potato and cut into 1" cubes.
    Microwave for 5 minutes to pre-cook and soften.
  • Wash the broccoli and cut into bite-sized pieces
  • Put the sweet potatoes and broccoli in a large bowl and add the olive oil, salt and pepper and garlic powder. Toss to cover.
  • Spread the sweet potatoes and broccoli on a cookie sheet.
    Bake in 450 degree oven for 25 minutes or until desired softness. Turn half way through.

For the Salmon

  • While the potatoes and broccoli are cooking, remove the salmon from the marinade and place on a hot grill.
    Cooking on a piece of aluminum foil will help prevent the fish from sticking.
  • Cook approximately 10 minutes or until desired doneness.
  • Plate up the salmon and sweet potatoes and broccoli and serve immediately.
    Garnish with lemon slice if desired.

Check out this delicious low-calorie, One Crust Healthy Apple Pie. It’s made with only 1/4 cup of sugar. Consequently, it’s the perfect dessert you don’t have to feel guilty about!

The recipe calls for Golden Delicious and Granny Smith apples. However, substitute if you like. One type should be a soft and easily cooked type of apple. The other and one a firmer type.

For example, in place of Golden Delicious, you can substitute Gravenstein or Bramley’s Seedling.

Good substitutes for Granny Smith, maybe Summer Rambo, Calville Blanc, or Goldrush apples.

I became familiar with these lesser-known apples from my husband. He is a cidermaker at a local cidery. Over 100 types of apples are grown there. Some are good for eating and some for baking. They press and make others into cider. The cidery processes fresh and hard cider and both are delicious!

In the fall, when the fruit is plentiful, our house is full of apples. We have discovered various ways to enjoy them.

For example:

  • dried into apple rings
  • as a complement to several meat dishes
  • stuffed
  • baked into a raw apple cake
  • and of course fresh

One Crust Healthy Apple Pie

This delicious apple pie is made with two types of apples and oly ΒΌ cup of sugar.

Ingredients

For the crust

  • 1 each store bought pie crust (bottom only)

For the filling

  • 3 cups Golden Delicious apples, chopped
  • 3 cups Granny Smith apples, chopped
  • 1.5 tbsp Cornstarch
  • 1/4 cup Sugar
  • 1 tbsp cinnamon and sugar mixture

Instructions

  • Preheat oven to 400 degrees
  • Mix chopped apples and sugar, stir. Apples will begin to break down and soften.
  • Mix in cornstarch and stir the mixture
  • Fill pie crust to the top
  • Place on center rack of oven and bake for approximately 40 minutes or until apples are fork soft.
  • After 30 minutes of baking, sprinkle the sugar and cinnamon mixture on the pie and continue cooking until done. The cinnamon sugar gives the pie a sort of sprinkled "top crust".
  • Pie will be puffed up when you remove it from the oven, and will settle as it cools.
  • Serve warm or let cool and refrigerate.

If you just need something to do on a lazy summer afternoon, bake the Best Ever Chocolate Cake!

My daughter and granddaughter are living with us right now. They’ll be here for the next few months.

Therefore, I’m trying to take advantage of our time together to do fun things and make memories with my granddaughter. However, we are in the Covid-19 quarantine, and consequently, our options are very limited.

Here it is in July, and the weather is hot. Therefore, we don’t even want to go outside.

We’d done two art projects and played a game of Chicken Dominoes, and then decided, “Let’s bake a chocolate cake!”


I dug out my favorite recipe and took a look at the ingredients.

  • The batter called for 1 cup of half and half, 1/2 cup of oil and 2 large eggs.
  • For the frosting, I needed 2 sticks of butter and 1/2 cup of sour cream!

I wanted to make this delicious chocolate cake, however, it wasn’t very healthy. In other words, I had to make some changes.


We made some ingredient changes

For example, in place of the half and half, I used Fage zero fat greek yogurt which turned out just fine. There wasn’t any noticeable change in the texture or flavor.

I cut back the sugar to 1 1/2 cups and the oil to 1/3 cup. I substituted 2 medium eggs for 2 large. Actually I only had medium eggs in the house.

For the frosting, I changed the recipe to one that only used 6 tbsp of butter and 1/3 cup of milk. I used 1%. The frosting was fluffy and delicious and is going to become my new go-to!


By making these changes, I made the recipe a little healthier.

For example, calories decreased from 486 to 293 calories per slice. And grams of fat from 18.2 to 10 grams of fat per slice. Sugar content decreased from 53 grams to 36 grams of sugar per slice.

Unfortunately, this does not make this cake low calorie, however, it improves it and allows you to feel less guilty when enjoying it.

My favorite chocolate cake recipe made lightened up and made healthier!

  • Two 9" round cake pans, greased and lined.

Ingredients

  • 1 3/4 cup Flour
  • 1 1/2 cup Granulated Sugar
  • 3/4 cup Cocoa Powder
  • 2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 1 cup Fage, 0 fat, plain greek yogurt
  • 1/3 cup Vegetable oil
  • 2 medium Eggs
  • 1 tsp Vanilla Extract
  • 1 cup Strong Hot Coffee

Chocolate Buttercream Frosting

  • 6 tbsp Softened Butter
  • 2 1/3 cups Confectioners Sugar
  • 3/4 cup Unsweetened Cocoa Powder
  • 1/3 cup Low Fat Milk
  • 2 tsp Vanilla Extract
  • 1/4 ts[ Sa;t

Instructions

  • Preheat oven to 350 degrees F
    Prepare cake pans
  • Stir together first 6 dry ingredients
  • In a separate bowl, wisk the wet ingredients
  • Stirring between additions, add the dry ingredients to the wet ingredients.
  • Stir until well blended.
  • Divide the batter between the two cake pans and bake on the center rack for 30 minutes or until toothpick inserted comes out clean and edges have pulled away from the side of the pan.
  • Allow the layers to cool completely before frosting.

For The Frosting

  • Beat the softened butter until smooth
  • Add all the remaining ingredients until well blended
  • Frosts middle and sides of two 9" round layers

This is one of the most delicious chocolate cake recipes you will ever make! In other words…you’ve got to make it at least once!

Everyone will want seconds. Serve with vanilla ice cream and sliced strawberries for a very decadent dessert! Above all, enjoy!
