In a medium bowl, mix the olive oil, salt, pepper, minced garlic and vinegar. to make a marinade.
Place the salmon in a food storage bag and pour in the marinade. Seal the bag and place in the refrigerate for 30 minutes to marinate,
While the salmon is marinating, prepare the sweet potatoes and broccoli.
For the Sweet potatoes and Broccoli
Pare sweet potato and cut into 1" cubes.Microwave for 5 minutes to pre-cook and soften.
Wash the broccoli and cut into bite-sized pieces
Put the sweet potatoes and broccoli in a large bowl and add the olive oil, salt and pepper and garlic powder. Toss to cover.
Spread the sweet potatoes and broccoli on a cookie sheet.Bake in 450 degree oven for 25 minutes or until desired softness. Turn half way through.
For the Salmon
While the potatoes and broccoli are cooking, remove the salmon from the marinade and place on a hot grill. Cooking on a piece of aluminum foil will help prevent the fish from sticking.
Cook approximately 10 minutes or until desired doneness.
Plate up the salmon and sweet potatoes and broccoli and serve immediately.Garnish with lemon slice if desired.
