Grilled Salmon with Roasted Sweet Potatoes and Broccoli

Ingredients

For the Salmon

  • 1 pound Salmon
  • 2 Tbsp Olive oil
  • 1/2 tsp Salt
  • 1/2 tsp Ground pepper
  • 1 Tbsp Minced garlic
  • 1 Tbsp Red wine vinegar

For the Sweet Potatoes and Broccoli

  • 2 large Sweet Potatoes
  • 2 cups Broccoli florets, cut into bite sized pieces
  • 2 Tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Ground pepper
  • 1 Tbsp Garlic powder

Instructions

For the Salmon

  • In a medium bowl, mix the olive oil, salt, pepper, minced garlic and vinegar. to make a marinade.
  • Place the salmon in a food storage bag and pour in the marinade. Seal the bag and place in the refrigerate for 30 minutes to marinate,
  • While the salmon is marinating, prepare the sweet potatoes and broccoli.

For the Sweet potatoes and Broccoli

  • Pare sweet potato and cut into 1" cubes.
    Microwave for 5 minutes to pre-cook and soften.
  • Wash the broccoli and cut into bite-sized pieces
  • Put the sweet potatoes and broccoli in a large bowl and add the olive oil, salt and pepper and garlic powder. Toss to cover.
  • Spread the sweet potatoes and broccoli on a cookie sheet.
    Bake in 450 degree oven for 25 minutes or until desired softness. Turn half way through.

For the Salmon

  • While the potatoes and broccoli are cooking, remove the salmon from the marinade and place on a hot grill.
    Cooking on a piece of aluminum foil will help prevent the fish from sticking.
  • Cook approximately 10 minutes or until desired doneness.
  • Plate up the salmon and sweet potatoes and broccoli and serve immediately.
    Garnish with lemon slice if desired.
