When I made the recipe I used fresh broccoli. Substitute frozen if you like. Grilling the salmon gives it a nice texture but you can also pan sear.

I have also mixed in red-skinned potatoes for variety. Another option is to replace sweet potatoes with cubed butternut squash. Include onions to enhance the flavor and add another plant sterol!

I’ve made this for my family and they loved it. Even my husband who usually doesn’t care for sweet potatoes, enjoyed them.

Ingredients

For the Salmon

  • 1 pound Salmon
  • 2 Tbsp Olive oil
  • 1/2 tsp Salt
  • 1/2 tsp Ground pepper
  • 1 Tbsp Minced garlic
  • 1 Tbsp Red wine vinegar

For the Sweet Potatoes and Broccoli

  • 2 large Sweet Potatoes
  • 2 cups Broccoli florets, cut into bite sized pieces
  • 2 Tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Ground pepper
  • 1 Tbsp Garlic powder

Instructions

For the Salmon

  • In a medium bowl, mix the olive oil, salt, pepper, minced garlic and vinegar. to make a marinade.
  • Place the salmon in a food storage bag and pour in the marinade. Seal the bag and place in the refrigerate for 30 minutes to marinate,
  • While the salmon is marinating, prepare the sweet potatoes and broccoli.

For the Sweet potatoes and Broccoli

  • Pare sweet potato and cut into 1" cubes.
    Microwave for 5 minutes to pre-cook and soften.
  • Wash the broccoli and cut into bite-sized pieces
  • Put the sweet potatoes and broccoli in a large bowl and add the olive oil, salt and pepper and garlic powder. Toss to cover.
  • Spread the sweet potatoes and broccoli on a cookie sheet.
    Bake in 450 degree oven for 25 minutes or until desired softness. Turn half way through.

For the Salmon

  • While the potatoes and broccoli are cooking, remove the salmon from the marinade and place on a hot grill.
    Cooking on a piece of aluminum foil will help prevent the fish from sticking.
  • Cook approximately 10 minutes or until desired doneness.
  • Plate up the salmon and sweet potatoes and broccoli and serve immediately.
    Garnish with lemon slice if desired.
